A gluten-free diet is one of the most challenging diets to adopt and follow, but the effort is worth it!

Since there is no medication for celiac disease (gluten intolerance), the only way to manage it is to follow a completely gluten-free diet. Celiacs who follow a gluten-free diet often suddenly feel better and, for the first time in years, are able to not only reconnect with food but to actually enjoy it.

This outstanding dietary guide provides comprehensive information on:

  • Celiac disease basics, from what causes celiac disease to how it is diagnosed to what effect the disease has on an individual's quality of life
  • Managing celiac disease, including dietary therapies, food guides, specific foods to avoid, foods to enjoy, nutritional supplements and living with celiac disease
  • Gluten-free meal plans, including a 30-day meal plan that provides an entire month of meals and snacks in an easy-to-understand format
  • Healthy gluten-free recipes, including breakfasts, breads and muffins, soups, salads, pasta, meat, poultry, vegetarian and vegan entrees and desserts

Editorial Reviews

Alexandra Anca explains the causes of celiac disease and addresses the challenges faced by folks who need to cook without gluten. It includes labeling information, tips for gluten-proofing a kitchen, and an aisle-by-aisle shopping guide to foods in three categories: avoid, be suspicious and enjoy. The second and third parts of the book are recipes and meal plans for celiacs and those who cook for them.

Although the title focuses on gluten-free diets, this readable book is also a primer on celiac disease... The authors admit that gluten-free living isn't easy, but they insist their diet can be "simple" and "delicious." ... A good place to start for those just finding out why their stomachs hurt.

Like many people in the US these days, I packed up and moved into the Gluten Free camp shortly after Christmas. I am not a celiac, but avoiding gluten has meant a positive change in my skin, hair, health, digestion, mental clarity, and energy level. Yee-haw! I do wonder if this has to do with gluten or more with the ways grain products are processed and enhanced with additives in our modern society. The Complete Gluten-Free Diet and Nutrition Guide: With a 30-Day Meal Plan and Over 100 Recipes provides a wealth of information about: Celiac disease basics, from what causes celiac disease to how it is diagnosed to what effect the disease has on an individual's quality of life. Managing celiac disease, including dietary therapies, food guides, specific foods to avoid, foods to enjoy, nutritional supplements and living with celiac disease. Gluten-free meal plans, including a 30-day meal plan that provides an entire month of meals and snacks in an easy-to-understand format. Healthy gluten-free recipes, including breakfasts, breads and muffins, soups, salads, pasta, meat, poultry, vegetarian and vegan entrees and desserts. Complete Gluten-Free Diet and Nutrition Guide provides dietary and nutritional guidelines along with 100 tantalizing recipes that can be enjoyed by everyone, not just those who are trying to manage celiac disease. The recipes! With deliciousness like Chocolate Hazelnut Biscotti, you don't have to feel sorry for yourself!

Many are being diagnosed with celiac disease and being forced to give up gluten. Complete Gluten-Free Diet and Nutrition Guide by Alexandra Anca, a registered dietitian who holds a master's degree in food science, with Theresa Santandrea-Cull should probably be a reference for those faced with that dietary change. As such, the book spends the first of five parts explaining the celiac disease, its symptoms and its effects on one's diet. The next section introduces the steps one must go through in providing a gluten-free environment and how to prepare for this lifestyle change. Part three tackles the ins and outs of providing the body with essential nutrients while having to replace items in one's diet. Part four is an easy-to-read and thorough look at a month-long meal plan utilizing many of the recipes set forth in the book's part five. Much more than a cookbook sharing a unique take on bread recipes, Complete Gluten-Free Diet & Nutrition Guide details the management of an enjoyable gluten-free way of living. The book focuses on the positives by giving lists of what can be eaten in a gluten-free diet.
